Protein Bars

One of my oldest friends, Lindsey, recently became a personal trainer and I hired her to get me back in shape...high school shape hopefully (or at least college!) So, besides the workouts (which are killing me in a good way), she sent me a "meal plan." Luckily, I can still cook pretty much as usual (except for the desserts - hence the few bites of lemon tart a few posts back). She also sent me some extra recipes and I thought I'd try her version of homemade protein bars. And I think they're pretty darn good. My changes are in blue.

P.S. I lost a pound this last week (well last 5 days)...go me!


No Bake Protein Bars

  • 1/2 cup natural peanut butter
  • 4 scoops chocolate protein powder
  • 2 cups oats
  • 2 tablespoons flax seed
  • 6 tablespoons milk (I needed some extra milk to make things "stick")
Mix all ingredients in large bowl (if you're like me, you'll use your hands - clean hands please). Pour into a greased 8x8 dish. Freeze for 2-3 hours or until firm enough (but not too firm) to cut. Cut into 9 bars. Individually wrap and freeze.

Nutritional Info: (1 serving) 200 calories, 8g fat, 15g carbs, 15g protein

Way to go on losing a pound! That's quite an accomplishment, especially when you have delicious looking squares like that hanging around!

I need a personal trainer to motivate me. I haven't been in the gym or out running for over 2 weeks now. The bars look good.

I like this Lindsey girl cause she pairs her training with food. I hear so many people complain they don't lose weight even thought they work out, and its because they don't change their diet at all.

Do you know if these fall apart or crumble at room temperature?

Nope, no crumbling or falling apart. I keep them in the freezer and then just take them out for a bit before I want to eat them.
